Recipe Contest Winner – Charla’s Meatless 4-Cheese Lasagna

We just finished a recipe contest with three of our favorite blogs:funcraftsandrecipes.com, momcooks.net, lisacooking.com. Their readers were asked to submit one of their favorite recipes and Elizabeth, Lisa, Valerie and myself chose the best three from each blog. Besides appearing in our blog here each recipe will be published on the emealsforyou.com website. Look for the winners here in the next couple of weeks.
Here is the first winner, our congratulations to Charla on her easy lasagna recipe.
Charla’s Meatless 4-Cheese Lasagna

| 16 | oz | Ragu, chunky, Gardenstyle Spaghetti Sauce with Tomato , Garlic and Onion |
| 6 | large | lasagna noodles |
| 16 | oz | cottage cheese, low-fat |
| 8 | oz | cheese, low-fat mozzarella |
| 0.5 | cup | cheese, Parmesan/Romano blend grated |
| 2 | tsp | garlic, minced |
| 0.5 | tsp | oregano, dried |
| 2 | large | egg |
Divide the mozzarella and the grated Parmesan/ Romano blend in half. Mix together cottage cheese, half of the mozzarella cheese, half of the Parmesan/Romano blend of cheeses, eggs, garlic, and oregano. Mix well.
Oil bottom of oven-proof lasagna dish and spread a little Ragu sauce (about 1/2 cup) on bottom of dish. Then start with layers
3 lasagna noodles
half of the cottage cheese mixture
half of the Ragu Sauce that’s left in the jar
3 or 4 lasagna noodles, depending on size of your dish
last half of the cottage cheese mixture
the remainder of the Ragu Sauce
Top with 1/4 cup Parmesan/Romano Cheese blend & 4 ounces of Mozzarella cheese
Bake at 350 degrees, covered for 35 minutes and then uncovered for 10 minutes. Let it set for 15 minutes or so before serving.
