Lemon Italian Ice

It has been a couple of crazy dessert weekends around here lately.  Last weekend I made dessert for the local Memorial Day picnic; Croissant Bread Pudding and Hazelnut Cheesecake.  This weekend the friend, who had the Memorial Day party, called and asked if I could help out with some desserts for her mom’s Red Hat Ladies meeting; dessert for 20 or so.  No problem; I made a huge Mary’s Special Birthday Cake and a Brenda’s Favorite Lemon Tart, both travel well and both feed an army.

The thing I had forgotten was the dinner party we were having on Saturday night for our new neighbors to meet our old neighbors and our “before the old neighbors”  neighbors.  What to make for dessert.  The new neighbor stopped by as I was icing the Red Hat Ladies chocolate cake and it became immediately obvious he was a big fan of chocolate icing.  That solved part of the equation, make a Flourless Chocolate Cake, but what to make that was lighter and easier on the waistline.  I baked some pears to serve with honey and blue cheese but the winner was the Lemon Italian Ice.

As I was a little busy in the kitchen I welcomed a dessert that basically requires mixing frozen lemonade with water and placing it in an ice cream freezer.  This is the perfect dessert when you are looking for something different, not expensive, easy to make and always a crowd pleaser.

Lemon Italian Ice

Recipe Summary

1 12 oz can lemonade
20 oz water

Place frozen (but softened) lemonade in an ice cream maker, add water and turn on for about 20 minutes until fluffy and white. Serve immediately or re-freeze in a separate container until needed, Thaw sightly before serving, Scape lemon ice with a spoon and layer in a bowl or glass.

    You can use a blender and then freeze the mixture. Scrap the frozen ice with a spoon and serve. This will give an icier product more like a granita than the smoother Italian ice.

    how do you make a coconut italian ice i love that flavor but i do not know how to make it would you make it with coconut jucice instead of lemonade?? althought this recipie does work and it is VERY VERY yumy!! :]

    Gianina,
    While I have never made coconut Italian ice I would try 1 can of coconut cream or milk and maybe 3 cans of water. Follow the recipe for the lemon ice and see how it comes out. Adjust the water content to get the right strength of flavor. Best of Luck!

    My favorite lo-cal, no guilt, dessert is Luigi’s Lemon/Cherry Real Italian Ice with no sugar added – made with real fruit juices and sweetened with Splenda. (60 calories per 4 oz. cup) Do you know how we might be able to make it sugar-free, and easier to eat – less like hard frozen ice? The ingredients on the package include: guar and xanthan gums. Is that something we could buy at the grocery store? Also, I was thinking about trying something with gelatin. I have an ice cream maker. I’ve found that even my sherbet, once frozen, is almost impossible to dip out of the container.

    If you make the Italian Ice with frozen juices made with Splenda or other artificially sweetened products it will cut the calories. Using an ice cream maker should give you a “slushy” result; when you freeze this it should be easy to scrap the Italian Ice from the sides of the container with a large spoon or scoop. It shouldn’t freeze like an ice cube. You can also put the container in the microwave for 15 seconds to loosen the ice.
