Recipe of the Week – Crown Roast of Pork

We were trying to come up with a menu for Christmas and didn’t want to go the usual turkey or ham route. We wanted something that said “Festive Meal” yet one you can put in the oven and forget about it while you open gifts and socialize. As you can see from the photo, this one feeds an army; so you have to have plenty of people to help you eat it. A quick note here, if you don’t see a crown roast in the meat counter of your favorite market ask the meat cutter to make one for you. They probably will enjoy showing off their talents and you will end up with a well trimmed roast.
Crown Roast of Pork

|10||lb||pork, crown roast|
|2||Tb||pepper, fresh cracked|
Preheat oven to 375 degrees. Have pork roast at room temperature. Rub roast with oil, sprinkle with pepper, salt and thyme and cook for 2 hours 20 – 30 minutes, until a meat thermometer registers 150 degrees. Allow to rest for 20 minutes before carving.
May be stuffed with apple and sausage stuffing.
