Sea Bass

Our effort to lose or at least contain our weight continues.  This is an excellent meal for those watching their waistline or even looking for a great dinner idea.  Sea Bass is a little on the expensive side but you only need about 4 -5 ounces per person.  A good and economical substitute is cod or any firm flesh fish.  An added benefit is that the fish takes less than 15 minutes to prepare.

This meal is so good you will even enjoy serving it to company.

2 Tb oil, olive
0.5 small onions, chopped
2 filets sea bass
3 cloves garlic, chopped
1 6 oz can tomatoes, diced
1 tsp capers
4 each anchovy filets

Heat 2 Tb of olive oil in an ovenproof pan; sear sea bass quickly on each side. Remove from pan and set aside. Place remaining oil in pan. Sauté onions, garlic, tomatoes, and capers until onions are translucent. Add anchovy filets and mash with a spoon.
Replace fish in pan, spoon sauce over the top, place in 300 degree oven for about 8-12 min. or until fish flakes.
