Recipe of the Week – Blueberry Muffins

I found myself with an overabundance of blueberries in the frig and decided that blueberry muffins might be the perfect use for them. This is a very easy recipe and other than the blueberries, the ingredients are most likely already in your pantry and refrigerator. I whipped up a batch in a matter of minutes and was sitting down enjoying them within the hour.
Substitute any berry for the blueberries and enjoy an extra cup of coffee and a wonderful way to start your day.
Mark’s Aunt’s Blueberry Muffins
|1||Tb||sugar, white, optional|
Preheat oven to 350 degrees. Beat eggs and sugar together until thickened. Melt butter and add to milk and then to the egg mixture. Reserve 2 Tb of the flour, mix remaining flour and baking powder together. Fold into batter, Mix reserved flour with the berries and fold into the batter. Spray muffin tins with PAM and spoon batter into muffin tins. Sprinkle tops with sugar ( preferably course). Bake for 25 minutes. Makes 1 dozen muffins.
